This Beaujolais from Fleurie, made from 100% gamay, undergoes 15 to 18 days of partial carbon dioxide fermentation in sealed tanks. This process starts automatically without the addition of yeast, sulphite or heating. After this, the wine is pressed very subtly and is then stored for 5 to 6 months partly in wooden barrels and partly in stainless steel tanks. The wine is bottled without filtering, but a small dose of sulphite is added (less than 15 mg per liter). The wine is very elegant with notes of cherry and licorice. The wine serve between 13 and 15 degrees Celsius. Good to combine with salads and poultry.
